What makes a pan and wok work well on a commercial induction cookers?

The quickest way to check whether your current pans will work with an induction cooker is to do the magnet test on the pans. This is easy, if a magnet sticks to the bottom of the pans they will work on a commercial induction cooker.

The commercial Induction cookers work well with any pans with a high ferrous metal content at the point where the base is in contact with the cooktop surface. Cast iron pans and any black metal or iron pans will work on an induction hobs. Stainless steel pans will often work provided the sole of the pan is a grade of stainless steel that has a high iron content, to check this do the magnet test, if the magnet sticks to the sole of the pan it will work on an induction cooktop, the better the magnet sticks to the pan, the more heat the induction cooker will generate in the pan.
